1 cup cottage cheese
1/2 cup unsweetened cocoa powder
1/2 cup honey or maple syrup
1/4 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup whole wheat flour
1/2 cup chocolate chips
1. Preheat your oven to 350°F (175°C).
2. In a blender, combine the cottage cheese, cocoa powder, honey (or maple syrup), vegetable oil, eggs, and vanilla extract. Blend until smooth.
3. In a large bowl, whisk together the baking powder, baking soda, salt, and whole wheat flour.
4. Pour the blended mixture into the dry ingredients and mix until just combined. Fold in the chocolate chips.
5. Spoon the batter into a lined or greased muffin tin, filling each cup about 2/3 full.
