Ingredients
For the cake:

– 1/2 tsp baking powder
– 2 tbsp sugar or keto sweetener
– 4 tbsp milk (dairy or plant-based)
– 1 tbsp melted butter or coconut oil
– Pinch of salt
For the cinnamon swirl:
– 1 tsp melted butter
– 1 tsp cinnamon
– 1 tbsp brown sugar or erythritol
For the glaze:
– 2 tbsp powdered sugar or erythritol
– 1 tsp milk
Instructions
1. Grease a large microwave-safe mug (at least 12 oz).
2. In the mug, whisk together flour, baking powder, sweetener, and salt.
3. Add milk and melted butter. Stir until smooth.
4. In a small bowl, mix cinnamon, melted butter, and brown sugar. Drop onto the batter and swirl gently with a knife.
5. Microwave on high for 60–90 seconds, until the cake rises and looks set but still slightly moist on top.
6. Mix powdered sugar with milk to make glaze. Drizzle over the warm cake.
7. Let rest 1–2 minutes before serving.
Notes
Cook time may vary depending on your microwave. Start with 60 seconds and check for doneness.

For a vegan option, use oat milk and coconut oil. For low-carb, use almond flour and erythritol.
