Ingredients

– 2 1/2 cups all-purpose flour

– 1 tsp baking soda

– 1 tsp ground cinnamon

– 1/2 tsp ground nutmeg

– 1 cup unsalted butter, softened

– 1 cup brown sugar, packed

– 1/2 cup granulated sugar

– 1 large egg

– 1 tsp vanilla extract

– 1/2 cup apple cider

– 1/4 cup granulated sugar (for rolling)

– 1 tsp ground cinnamon (for rolling)

Instructions

1. Preheat your oven to 350°F (175°C).

2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.

3. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.

4. Beat in the egg and vanilla extract, mixing until well combined.

5. Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider, until a dough forms.

6. Chill the dough in the refrigerator for about 30 minutes.

7. In a small bowl, combine the granulated sugar and cinnamon for rolling.

8. Scoop out tablespoon-sized portions of dough and roll them into balls, then roll each ball in the cinnamon sugar mixture.

9. Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.

10. Bake for 10-12 minutes or until the edges are lightly golden.

11. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
