Ingredients
1 ripe banana
½ cup cottage cheese
2 eggs
½ cup rolled oats
½ tsp cinnamon
¼ tsp vanilla extract
½ tsp baking powder (optional)
Pinch of salt
Coconut oil or butter for cooking
Instructions
Add banana, cottage cheese, eggs, oats, vanilla, cinnamon, salt, and baking powder to a blender.
Blend until smooth and thick.
Let batter rest 5–10 minutes to thicken.
Heat a skillet over medium. Grease lightly with oil or butter.
Scoop ¼ cup of batter per pancake onto skillet.
Cook 2–3 minutes until bubbles form.
Flip and cook 2 minutes on the other side.
Serve hot with toppings of choice.
Notes
Use overripe bananas for extra sweetness.
For chunkier texture, mash by hand instead of blending.
Freeze leftovers with parchment between pancakes.
