Ingredients
– 1/4 cup cottage cheese (blended smooth)
– 2 tbsp cocoa powder
– 2 tbsp almond flour (or oat flour)
– 1 scoop chocolate protein powder (optional)
– 1–2 tbsp sweetener (honey, maple syrup, or sugar substitute)
– Splash of milk (dairy or almond)
– 1 tbsp dark chocolate chips (optional)
Instructions
1. Blend cottage cheese until completely smooth.
2. Add cocoa powder, almond flour, protein powder, sweetener, and milk. Mix into a thick batter.
3. Stir in chocolate chips if using.
4. Pour batter into a microwave-safe mug or ramekin.
5. Microwave for 60–90 seconds until set on top but fudgy in the center.
6. Serve warm, optionally topped with ice cream or nut butter.
Notes
Start with 60 seconds in the microwave to avoid overcooking.
Make it keto by using almond flour and a sugar-free sweetener.
For a mocha twist, add 1 tsp espresso powder.
Best enjoyed fresh, but can be refrigerated and reheated for 10–15 seconds.
