These Healthy Apple Cinnamon Muffins are a delicious and nutritious way to start your day. Made with whole wheat flour, fresh apples, and a hint of cinnamon, they are perfect for breakfast or a snack.

Ingredients

– 1 cup whole wheat flour

– 1 cup rolled oats

– 1/2 cup brown sugar

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1 teaspoon ground cinnamon

– 1/4 teaspoon salt

– 1/2 cup unsweetened applesauce

– 2 large eggs

– 1 teaspoon vanilla extract

– 1 cup diced apples (about 1-2 apples)

– Optional: 1/4 cup chopped nuts

Instructions

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

2. In a large bowl, mix together the flour, oats, brown sugar, baking powder, baking soda, cinnamon, and salt.

3. In another bowl, whisk together the applesauce, eggs, and vanilla until well combined.

4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the diced apples and nuts if using.

5. Divide the batter evenly among the muffin cups.

6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

7. Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

– For extra moisture, you can add a tablespoon of yogurt to the batter.

– These muffins freeze well; store them in an airtight container for up to 3 months.
