1 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter
3 cups chow mein noodles
1/2 teaspoon peppermint extract
1/4 teaspoon salt
1 cup mini chocolate eggs (for filling)
Optional: edible green grass (for garnish)
1. In a microwave-safe bowl, combine the chocolate chips and peanut butter.
2. Microwave in 30-second intervals, stirring in between, until smooth.
3. Stir in the peppermint extract and salt until well combined.
4. Add the chow mein noodles to the chocolate mixture and gently fold to coat.
5. Using your hands, form small nests on a parchment-lined baking sheet.
6. Create an indentation in the center of each nest for the chocolate eggs.
7. Refrigerate for about 30 minutes until set.
8. Once set, fill the nests with mini chocolate eggs and garnish with edible grass if desired.
