Ingredients

1 cup rolled oats

1/2 cup almond butter

1/4 cup honey

1/4 cup cocoa powder

1/2 tsp peppermint extract

1/4 cup mini chocolate chips

1/4 cup shredded coconut (optional)

Instructions

1. In a medium bowl, combine rolled oats, almond butter, honey, cocoa powder, and peppermint extract.

2. Mix until well combined.

3. Fold in mini chocolate chips and shredded coconut if using.

4. Scoop out tablespoon-sized portions and roll into balls.

5. Place energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to a week.

These bites can also be frozen for longer storage.
