– 1 1/2 cups graham cracker crumbs
– 1/2 cup unsweetened shredded coconut
– 1/2 cup dried cranberries, chopped
– 1/2 cup white chocolate chips
– 8 oz cream cheese, softened
– 1/4 cup butter, melted
– 1/4 cup powdered sugar
– Zest of 1 orange
– 1/2 tsp vanilla extract
– Additional dried cranberries and white chocolate for topping
1. In a large bowl, combine graham cracker crumbs, shredded coconut, chopped cranberries, and white chocolate chips.
2. In another bowl, mix softened cream cheese, melted butter, powdered sugar, orange zest, and vanilla extract until smooth.
3. Combine the wet and dry ingredients, mixing until well combined.
4. Press the mixture into a lined 8×8 inch baking dish.
5. Refrigerate for at least 2 hours to set.
6. Once set, cut into bars and top with additional cranberries and white chocolate.
