Pistachio Chocolate Chip Cookies: Deliciously Soft & Buttery

These pistachio chocolate chip cookies are buttery, soft, and filled with crunchy pistachios and melty chocolate chips. A sweet-salty treat that’s perfect for any day of the week.

Ingredients

1 cup unsalted butter, softened  

1 cup brown sugar  

1/2 cup granulated sugar  

2 large eggs  

2 tsp vanilla extract  

2 1/2 cups all-purpose flour  

1 tsp baking soda  

1/2 tsp salt  

1 cup roasted salted pistachios, chopped  

1 1/2 cups semi-sweet chocolate chips  

Instructions

1. Cream butter and sugars until fluffy.  

2. Add eggs one at a time, then vanilla.  

3. In a separate bowl, whisk together flour, baking soda, and salt.  

4. Gradually mix dry ingredients into wet mixture.  

5. Fold in chopped pistachios and chocolate chips.  

6. Chill dough for at least 2 hours or overnight.  

7. Preheat oven to 350°F and line baking sheets with parchment paper.  

8. Scoop dough and place onto sheet, spaced apart.  

9. Bake for 10–12 minutes until edges are golden.  

10. Cool on tray for 5 minutes, then transfer to rack.  

Notes

Use roasted, lightly salted pistachios for best flavor.
Dough can be frozen up to 3 months.
Add flaky sea salt on top before baking for an elevated finish.
