1 cup mashed sweet potato

1 cup canned chickpeas, drained and rinsed

1/2 cup almond butter

1/4 cup maple syrup

1/4 cup cocoa powder

1 tsp vanilla extract

1/2 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1/2 cup dark chocolate chips

Instructions

1. Preheat your oven to 350°F (175°C).

2. In a large bowl, mash the sweet potato until smooth.

3. Add the chickpeas and almond butter, and mix until well combined.

4. Stir in the maple syrup, cocoa powder, vanilla extract, baking powder, cinnamon, nutmeg, and salt until the batter is smooth.

5. Fold in the dark chocolate chips.

6. Pour the batter into a greased or lined 8×8 inch baking dish.

7. Bake for 25-30 minutes, or until a toothpick comes out clean.

8. Let cool before cutting into squares.

Notes

These brownies are best enjoyed within a few days but can be stored in an airtight container in the fridge for up to a week. They also freeze well! Feel free to add nuts or dried fruits for extra texture.
