1 ¾ cups almond flour

½ teaspoon baking soda

½ teaspoon salt

½ cup coconut oil, melted

½ cup brown sugar

¼ cup maple syrup

1 teaspoon vanilla extract

1 large egg

½ cup chocolate chips

¼ cup chopped nuts (optional)

1 teaspoon cinnamon (optional)

Instructions

1. Preheat the oven to 350°F (175°C).

2. In a bowl, mix almond flour, baking soda, and salt.

3. In another bowl, combine melted coconut oil, brown sugar, maple syrup, vanilla extract, and egg.

4. Mix the wet ingredients into the dry ingredients until well combined.

5. Fold in chocolate chips and nuts, if using.

6. Scoop tablespoon-sized balls of dough onto a parchment-lined baking sheet.

7. Flatten the cookies slightly with your fingers.

8. Bake for 10-12 minutes or until golden brown around the edges.

9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a festive touch, sprinkle some sea salt on top before baking.

Store cookies in an airtight container for up to a week.

These cookies can also be frozen for up to 3 months.
